Sprouted Moong Gram (Mung Bean) Farm Salad

I grew up watching my grandmother and mother germinate moong gram, which are also called mung beans.  The sprouted beans are really hearty and delicious even on their own.  You automatically feel healthier just consuming them.

Three Color String Bean Palya @ Vegetopolis Cooking Demo

This past weekend, I gave a veggie cooking demo at Vegetopolis at the Pig Island event on Governor’s Island. I had found purple, yellow and green string beans at the farmer’s market so I decided to make a South Indian stir fry dish called playa, which is basically fresh veggies cooked with fried spices, coconut, lemon and cilantro.  I realized after cooking the purple ones though that they actually turn green so enjoy the color before you cook them!

This Saturday, I’ll be giving a South Indian cooking demo using seasonal vegetables at Pig Island which will take place on Governor’s Island.  That’s right, this vegetarian is going to Pig Island!  Historically, Pig Island, the brainchild of Jimmy Carbone of Jimmy’s No. 43, was all about celebrating local and sustainable pig, but now thanks to my friend and fellow locavore, Cathy Erway, it’s about celebrating local vegetables too!

Breaded Eggplant Pakoras Over Greens

 

Pakoras are a North Indian appetizer, made out of vegetables that are battered in chickpea flour and water and then deep fried.  I wanted to make a variation of this recipe that was not deep fried out of a few ingredients I had leftover from my farmshare: Japanese eggplant, eggs, parsley and Romaine lettuce.
