Dakos Salad
Ingredients:
1 barley rusk
2 small plum tomatoes, grated or chopped fine
2-3 tablespoons crumbled feta or myzithra cheese
Greek oregano
4 kalamata olives
olive oil
salt and pepper to taste
green onions (optional)
Method:
Sprinkle the rusk with very little water to dampen and soften slightly. Place it on a plate. Layer rusk with tomatoes (as little of the juice as possible), feta, oregano and olives. Top with olive oil, salt and pepper.
